This is a base recipe to get the nutrition info. for a lightened up version of Pasta Fagioli soup. I leave out the meat and also the pasta (I am trying to steer clear of processed carbs). I haven't added any seasoning because I do it differently each time I make it and I mostly wanted the nutrition info. Feel free to use it as a start to your next soup. Once I have the base recipe I find it so much easier to track, even if I decide to add meat, pasta, or anything else to the soup!

1 32 oz. box chicken broth
1 14 oz. bag frozen green beans, thawed
1 c. garbanzo beans (chickpeas)
1 c. kidney beans
1 10 oz. pkg. frozen spinach, thawed and squeezed dry
1 tblsp. garlic
8 tblsp. grated Parmesan cheese

Here is how you make Italian Tomato and Bean Soup:

Spray a large soup pot with cooking spray and saute the garlic until fragrant. Add the tomatoes, chicken broth, and beans. Season however you like (I like a lot of black pepper, some kosher salt, oregano, and basil). Bring soup to a boil and then simmer on low. The longer you simmer the better the soup will be, so it depends on how much time you have! Stir in the spinach about 5 minutes before serving.
