2 large carrots, diced
3 ribs cerery, diced
1/2 of a med. yellow onion, diced
2 tsp. chicken boullion granules, or 2 chicken bouillon cubes
2 bay leaves
1/2 tsp. dried thyme
1/4 tsp. pepper
1/4 c. chopped fresh parsley or 2 Tblsp. dried parsley

Here is how you make Overnight Ham and Bean Soup - Fix-It and Forget-It:

Rinse beans. Combine beans and 6 c. water in saucepan. Bring to a boil. Reduce heat to low and simmer 2 minutes. Remove from heat. Cover and let stand 1 hour.Place beans and soaking water and the ham bone and ham pieces in a large stock pot. Add 3 c. water, carrots, celery, bouillon, bay leaves, thyme, parsley, and pepper.Bring to a good boil. Reduce temperature to simmer; cover and cook several hours until beans are tender; about 4 - 5 hours. Stir once in a while. Remove ham bone and cut meat off the bone and return 1/2 of the meat to the stock pot.
