1 can Navy Beans (14oz.), drained and rinsed
4 cups fresh or frozen spinach

Here is how you make Vegetarian Mushroom and Bean Soup:

Brown onions, "bacon," celery and garlic in canola oil in large soup pot. Continue to brown until onions are carmelized (caramel brown, sweet and wilted). Add mushrooms and saute until mushrooms release their liquids.Add water, salt, pepper and bay leaf. Simmer for 10 minutes. Add beans to heat through.
