Bacon, 4 medium slices, cooked
Olive Oil, 1 tbsp
*Beans, cannellini, 6 cup (approximately 3 cans), drained and rinsed
Celery, raw, 3 stalk, small (5" long) - chopped
Baby Carrots, raw, 12 large - chopped
Onions, raw, 1 cup, chopped
Garlic, 4 cloves - chopped
Chicken Broth, 5 cups
Spinach, fresh, 2 cup
Mushrooms, canned, 1.5 cup, drained (or use fresh)

Here is how you make White Bean and Bacon Soup (Slow Cooker):

cook bacon until crisp. remove and let cool on paper towel. drain pan. add oil, saute chopped onion, chopped garlic, chopped celery about 5 minutes. add carrots, salt and pepper taste and sautee a few minutes. Transfer to slow cooker, add 2 cans of beans, chicken broth and chopped up bacon. Add 3/4 cup of water. Cook on high for 4 hours. Take about half of the liquid out and put in blender/food processor, blend until smooth. Add back to soup. Add in 3rd can of beans, spinach and mushrooms.
