1 teaspoon butter
3 garlic cloves, minced
1 medium onion, chopped
2 stalks celery, rinsed and chopped
2 medium carrots, rinsed and chopped
1 turnip, diced in 3/4 inch cubes
a generous handful of pearled barley, rinsed
1 quart chicken or vegetable broth
1 15-oz can tomatoes including liquid
2 15-oz cans white (cannelini) beans, rinsed and drained
1 bay leaf
salt and pepper to taste
1 tbsp balsamic vinegar
1 bunch Swiss chard, rinsed, roughly chopped with stalks removed

Here is how you make White Bean and Chard Soup:

In a large, heavy-bottomed pot, heat the olive oil and butter over medium-high heat until the butter begins to foam. Add the garlic and, when fragrant, add the onion and cook until onion is translucent. Add the celery, carrots, and turnip, and sautee for five minutes, or a little more. Add the barley and stir to mix with the vegetables. Then, add chicken broth, tomatoes in their liquid, and the beans. Add a bay leaf, salt and pepper to taste, and a tiny bit of balsamic vinegar if it floats your boat. Simmer for 30-40 minutes, or until barley is tender.
