4 cloves garlic, chopped
1 tablespoon extra virgin olive oil
8 cups boiling water
1 cube Knorr Caldo de Tomate bouillon
3 medium potatoes, peeled and chopped
1 link Harris Teeter Hot Pork Sausage, cooked and sliced into disks
1 can dark red kidney beans, rinsed and drained well
2 cups fresh kale, chopped and packed

Here is how you make Surfer Soup:

In a covered skillet, cook the hot pork sausage in a cup of water for about ten minutes; drain the water out, cut the sausage into coin-like disks; set aside.Meanwhile, cook the onion and the garlic in the olive oil until translucent in a Dutch oven. Dissolve the bouillon cube in 2 cups of boiling water and add to the onions. Add the remaining 6 cups of water, the potatoes, and kidney beans, and bring to a boil for a few minutes. Reduce heat and simmer for about half an hour, until potatoes are tender. Add the sausage disks. Add the kale and cook for about another ten minutes on low. Season to taste. Serving Size:?Yields approximately 9 1 cup servings
