What Are The Ingredients For Beef Barley Mushroom Soup Recipe?The ingredients for Beef Barley Mushroom Soup are: 2 Tbs Butter1 Tbs Olive Oil 1 small onion, chopped 2 stalks celery, chopped 1-1 lb bag baby carrots 1 lb sirloin steak 1/2 lb White Mushrooms, sliced 1/2 lb Portabella Mushrooms, sliced 3 garlic cloves, minced 1 tsp ginger, grated 7 cups beef broth (I used water and Knorr homestyle stock) 1/2 cup pearl barley 1/2 tsp dried thyme 1/2 cup water 1 tsp black pepper How Do I Make Beef Barley Mushroom Soup?Here is how you make Beef Barley Mushroom Soup: Melt 1 Tbs butter and olive oil in the bottom of a large pot over medium heat. When it starts to bubble, add the chopped onion and celery and cook until softened. Grate the ginger into the onion and celery, and add the garlic. Cook 1-2 minutes more. Push the mixture to one side and add the steak. Cook the outsides, about 5 minutes and remove steak to a plate. Let the steak rest about 5-10 minutes to cool, then cut into bite-sized pieces, trimming all visible fat. While the steak is resting, add the remaining Tbs butter and mushrooms to the pot, stirring occasionally. When the mushrooms have softened, add the water and bring to a boil and add the concentrated stock. Add pearled barley, thyme, black pepper and beef. Reduce heat to medium-low and simmer for 50 minutes, or until barley is done. Add 1/2 cup of water and taste, then season accordingly.
