Add the onions and garlic. Saute until onions start to brown and become tender. Season with salt and pepper. Add the thyme and bay leaves. Cook for 1 minute longer. Add the potatoes and broth. Bring to a boil, cover and simmer for about 10 minutes, or until the potatoes are fork tender. Mash the potatoes with a potato masher or the back of the spoon a little to help thicken the soup. Don't mash them all. Stir in the cheddar soup and the corned beef.
