16 oz frozen mixed vegetables
10 oz frozen baby limas
10 oz frozen speckled butter beans
1 can sliced carrots, drained
1 can green beans, drained
1 can corn, NOT drained
1 can kidney beans, drained
1.5 large pototoes
1 can diced tomatoes with italian seasoning
1 can petite diced tomatoes
1 can 99% fat free chicken broth
1 TBSP bacon grease


How Do I Make Daddy Jack's Homemade Beef Vegetable Soup?

Here is how you make Daddy Jack's Homemade Beef Vegetable Soup:

Salt and brown ground beef. Add water to halfway fill large pot (8 quart pot or so). Add italian seasoning and salt to taste. Chop celery fine and add to water. Cover and let boil low for about 30 minutes.In a seperate pot, bring all frozen vegetables to a boil. Add bacon grease and let boil for about 20 minutes. Drain and add cooked frozen vegetables. Salt if needed. Boil for approximately 15 minutes.Add carrots (drained), green beans (drained), kidney beans (drained) and corn (undrained). Boil for approximately 30 minutes.Cube potatoes and add to soup. Add some chicken broth to cover veggies, if needed. Boil approximately 15 minutes.Chop onion finely and add to soup. Boil until potatoes are tender.Add canned tomatoes (undrained) and salt to taste.Let simmer for at least an hour before serving.1 serving = 1 cup.
