Boil the beef in the water, skimming the scum. add onions, celery, carrots, bay leaves, & Italian spice, bring back to boil, then simmer for 3-4 hours. Remove meat and bones, let cool. Dice meat. Let liquid and veggies cool and refrigerate overnight. Next day, take fat off and throw it away! Reheat, add meat, mushroom and barley. Cook until barley is done. Taste for seasoning.
