4 cups (32 oz) chicken broth, 99% fat free
1 can (7 oz) green chile peppers
1 medium yellow onion, diced
2 stalks celery, diced
1 jalapeno pepper, diced, no seeds
3 Tbsp fresh cilantro, chopped
3 cups shredded cole slaw mix, raw
1 tsp ground cumin
1 tsp chili powder
1 Tbsp garlic powder
salt to taste
pepper to taste

Here is how you make Mexican Tomato Beef Soup:

Put a large pot on medium heat. To the pan add the petite diced tomatoes, broth, beef, spices and cole slaw mix. Put mexican style tomatoes in blender and blend. May blend onion, celery, chile peppers, and jalapeno if desired, otherwise add to pot. Simmer until cole slaw is tender, about 20 minutes. Makes approximately 9 servings.* My family won't eat peppers and onions, so I blend them. Also, add more or less spices and peppers according to your taste.
