Here is how you make Mom's Beef Escarole Soup:

Simmer beef in one gallon of water for about 2 and half hours with 1 bay leaf. Remove bone and cut up meat into bite size peices. Add onion and parsley. Let simmer for 10 minutes.Add carrots and celery and let simmer for 15 minutes.Add seasonings and simmer until carrots are tender.Add orzo pasta and let simmer for 10 minutes. Add escarole and pat down slowly, escarole will melt into water as it gets hot. Drizzle with tablespoon of olive oil.Let sit half hour before serving.
