Salt, pepper, garlic to taste
Onion, chopped, 1 cup
Beef Bouillion Cubes, 3 (optional)

Barley, 1/2 cup

Rutabaga, 2 cups, diced
Carrot, 2 cups, diced
Celery, 2 cups, diced
Potatoes, 2 cups, diced

How Do I Make Mom's Beef Vegetable Soup?

Here is how you make Mom's Beef Vegetable Soup:

Place chuck roast in large stock pot and cover with water (depending on how much soup you want to end up with!).Add salt, pepper and garlic to taste. Add one cup chopped onion and bouillion cubes (if using). Place over medium heat.While this is on stove, cut up all remaining vegetables. Check roast at about an hour, and skim off any fat that has risen to surface. Remove roast and cut into small stew-like pieces and return to pot. If using regular barley, put it in now.Beginning with rutabaga (it takes the longest to cook) start adding vegetables to soup broth. Wait 20 minutes, then add carrots and celery; another 20 minutes then the potatoes. If using quick barley, add it now. Cook until all vegetables are tender. Putting all vegetables in at the same time will only make some overcook while waiting for the others to get tender.Makes 12 servings.This makes alot, so invite people over! It also freezes great.
