3 stalks celery, diced
1/2 medium carrots, diced
1 medium onion, diced
1 tbs garlic, minced
1 tbsp olive oil

2 cups Bob's Red Mill Vegi Soup Mix
1 can beef broth
6 cups water
1 can diced tomatoes

All of the following are dried:
1 whole bay leaf
1 tsp ground oregano
1 tsp parsley
.5 tsp savory
.5 tsp rosemary

Salt (I used about 1 tbsp, so that's what the nutritional values are for)
Pepper, to taste

Here is how you make Silly Soup:

I use a big pot for this, as the barley in the soup mix soaks up a lot of moisture.Prepare the vegetables. You can use any you have on hand, but this combo is pretty predictable in my kitchen. Sautee the vegetables in the olive oil until the onions soften.Add the remaining ingredients and bring to a boil. Simmer for about an hour, or until the peas are softened.Serving Size:?Makes 12 servings
