This simple but tasty soup is quick and easy to prepare, making it great for busy families. It's also a wonderful way to get kids to eat their vegetables. I use a crock pot to cook mine, but a large stove top pot works just as well. 1) Heat your crock pot to 300 degrees and add the water and beef stock. Chop the vegetables and add the seasonings, then let it cook for about 45 minutes. 2) After 45 minutes, cook the ground beef and add it to the pot. Cook for an additional 15 or 20 minutes. This will leave the vegetables cooked but still a bit crunchy, which is my preference. For those who want the vegies softer, add 20-40 minutes of cook time depending on your preference. 3) During the last 10 minutes of cooking, cook the egg noodles.
