1 head garlic cloves
2 litres of chicken broth, fat free
1/2 kg Italian bread (day old is best)
750 crushed or strained tomatoes
1/4 teaspoon red pepper flakes crushed
10 basil leaves
salt and pepper to taste
8 tablespoons parmesan cheese (optional)
8 cherry tomatoes (optional)

Here is how you make Tomato and Bread Soup [Pappa di Pomodoro]:

If Italian bread is not stale, slice and place it in a 350F oven for 15 minutes to toast. Peel garlic cloves and cut each clove in half to expose a flat side of the clove. Reserve half the cloves for rubbing on toasted bread. Heat olive oil in large frying pan and add remaining garlic cloves. Saute until cloves are golden, then discard fried cloves. Add tomatoes, basil and red pepper flakes to olive oil and simmer for 15 minutes. Bring chicken broth to boil in large pot. Break garlic-rubbed toast into 2-inch pieces and stir into chicken stock along with simmered tomatoes and oil. Let soup simmer for an additional 5 minutes. Serve garnished with one or two fresh basil leaves, chopped fresh tomatoes and parmesan cheese, if desired.
