The ingredients for Cream of Broccoli-Lentil Soup are:

2 cloves garlic
1 large onion
2 T. olive oil
4 medium carrots
1 C. dry lentils
4 C. water
4 chicken or vegetable flavored boullion cubes
2-14oz pkgs. frozen chopped broccoli, divided
2 T. Soy Sauce
1/4 tsp. oregano powder
2 C. skim milk
salt and pepper to taste


How Do I Make Cream of Broccoli-Lentil Soup?

Here is how you make Cream of Broccoli-Lentil Soup:

1. Chop or grate onion and garlic in food processor/blender. Heat oil in large pan and saute the onion/garlic until soft--2-3 min.2. While sauteing the onion, peel and grate/chop the carrots. Add them to the onion and saute for about 5 min.3. Rinse the lentils and let them soak in some water while you cook the carrots. Drain and add to the pot. Add the water and boullion as well. Cook for 15-20 minutes or until lentils are soft.4. Add one package broccoli to the pan and cook for 5 min. This should be a relatively thick mixture. Carefully puree the soup in small batches in your blender/food processor. Return all to pot.5. Add the soy sauce, oregano, the remaining package of broccoli and salt and pepper to taste. Cook for about 5 min. until broccoli is tender. Add milk and heat through. Enjoy!This makes about 8--1 1/2 cup servings. Note: sometimes I use onion salt at the end to add more flavor, or more boullion. This is a very flexible recipe: you can easily substitue another vegetable for the broccoli, add spices, leave out the milk (I do this sometimes because I am sensitive to milk and I think it makes the flavor stronger without the milk!), or top it with sour cream or cheese depending on your personal preferences.Number of Servings: 8Recipe submitted by SparkPeople user WANDERR.
