boil chopped carrots in water first (though i'm sure you could do right in chicken broth as well) until starting to get soft, drain, put back into pot and toss with curry powder until moderately coated. cover this with the chicken broth - just above the level of carrots. cook until carrots are soft. take off heat and add coconut milk, then mix with a stick blender until very smooth, adding salt and pepper to taste. it's usually still hot enough at this point, but you can put back on stove to reheat if needed. freezes very very well.Serving Size: makes aprx. 6 servings..
