1) In a large saucepan, sweat onions in the butter. Add salt, pepper.2) When onions are soft, add brown rice. Sautee for about 5 minutes3) Over medium-high heat, SLOWLY add chicken broth. This is very important. The broth must resume its temperature before you add more (add in 1/2-1 c increments, allow to come to temp).4) Allow brown rice to begin to soften (about 15-20 minutes). Add carrots.5) SImmer over medium-high heat from appx. 40 minutes, or until carrots are soft. Rice should still hold some of its texture.6) With a stick blender or in a food processor, blend ingredients until texture of "cream of wheat."
