1 medium russet potato, peeled and cut into 1" cubes
4 cups water + 2 teaspoons salt OR 4 cups low-sodium chicken broth
1 cup fat-free plain yogurt

Here is how you make Gene Smart Celery Soup:

Heat the oil in a large heavy stockpot over medium-high heat. Add the celery, onions and leek and cook, stirring occasionally, until beginning to soften, 8 to 10 minutes. Add the potato and water or broth and bring to a boil. Reduce the heat and simmer until the potato is tender, 8 to 10 minutes longer. Let cool about 10 minutes.Stir the yogurt into the soup. In batches, transfer the soup to a blender and puree (or puree in the pot with an immersion blender). Strain the soup through a strainer. Store in containers in the refrigerator.
