Flour, 2 cups
Milk, nonfat, 6 cups
Salt, 2 tlb (or to taste)
Pepper, 1 tlb (or to taste)
Cheddar Cheese, sharp (16 oz)

Here is how you make HOMEMADE POTATO-CHEESE SOUP WITH VEGETABLES:

Makes 32, 1-cup servings. (Cut in 1/4 for a more manageable amount)Peel, dice, and cook potatoes, until tender. (Save water from cooking potatoes and all vegetables to use in soup.) Dice onions and celery, and boil about 10 minutes until tender.Cook frozen carrots and peas, per package directions. Combine all vegetables, vegetable water, and chicken broth. Set aside.Make white sauce, by melting butter in heavy sauce pan. Add flour, salt and pepper and stir until blended. Turn off heat. Use 2-3 cups of the milk, and stir into flour mixture until smooth. On low heat, bring to a boil, stirring constantly. If mixture becomes lumpy, use a beater to make smooth. Let mixture bubble one minute. Add remainder of milk and the cheddar cheese.
