3 x large onions
1 x leek
6 cloves garlic
1 x bunch celery
4 x carrots
1 cup red wine
1 cup each barley, lentils, split peas (or any dried pulses)
2 cans kidney beans
2 x cans butter (lima) beans (or any unflavoured beans)
1 x large bottle reduced sodium reduced V8
1 x bottle crushed tomatoes
2 x tablespoons tomato paste
1/2 x teaspoon sugar
stock cubes (vegetable or beef)
chilli or tabasco
3 x bayleaves (fresh if possible)
fresh oregano
fresh thyme
fresh parsley to serve
Parmesan cheese to serve

How Do I Make Sarah Soup?

Here is how you make Sarah Soup:

Finely chop onions, leek, celery, carrots & garlic. Heat 1/4 cup of olive oil in a LARGE stock pot. Add onions and fry until they start to go clear. Add leeks and garlic, fry for another 2 mins before adding carrots & celery. Cover and cook on high for 5 mins -stirring frequently so vegetables don't burn. Once softened pour 1 litre boiling water into pot and add cup of wine. Allow to boil for 5 minutes then add further litre of boiling water or until pot is quite full. Wash barley & dried pulses thoroughly and drain off liquid. Add into stock pot and reduce heat to minimum. Allow to simmer covered for 1 - 2 hours stirring frequently to ensure pulses don't stick. After several hours add the V8, crushed tomatoes, tomato paste & (rinsed) canned beans. Allow to simmer another hour (or so) before seasoning with stock, chilli, sugar & pepper -or however/whatever you please.I prefer to eat this soup the day after cooking -I leave it on the stove top overnight. This recipe is enough to make at LEAST 1 gallon so depending on your requirements reduce ingredient quantities. Being I make it vegetarian I simply put in containers & keep for up to 2 weeks in the fridge.Serving Size: A LOT!!!Number of Servings: 10Recipe submitted by SparkPeople user SARAHRICK.
