Once it is melted, add the onion and cook until the onion is translucent, about 5 min. Add the broccoli, cooking for about 2-3 minutes. Reduce the heat, stir in the flour, and cook for an additional minute or two. Add the mustard and the vegetable stock. Bring to a boil, then simmer for 5 minutes. Add the milk, simmer for another 5 minutes. Add the cheese, stirring until melted, then season with salt, pepper, and cayenne if desired. Chopped garlic and/or grated carrots can also be added.The nutritional info is based on the brands that I used, so of course, YMMV. It also does not include the salt, both because I do not track sodium, and because it is up to you to add as much as you like. It is supposed to make 6 servings, but not sure how many cups each one is, sorry - a little over 1 cup each, I would guess, based on the amount of liquid ingredients.
