Saute onions and celery in butter and olive oil until softened. Peel & cube potatoes, boil until softened. Reserve 2 c liquid, add chicken bouillion to this. Set cooked potatoes aside. To the onions, stir in flour. Season with pepper and fresh garlic. Add chicken stock, let simmer and thicken on Med-Low. Add 1 can of beer and 1-1/2 cups of milk, 1 tsp worcheshire, 1 tsp dijon mustard, along with the cheeses. Let simmer on Low until thickened and cheese is all melted. Add potatoes.
