In large pot put four cups of water four chicken bouillion cubesadd one Cup of diced celery, one Cup of diced Onion.Bring to boil then simmer for 20 minutes.Add two cans of sliced potatoes(drained) and 2 packages of frozed mixed vegetables. Cover and simmer until vegetables are tender.In a separate sauce pan on medium heat warm 2 cans of cream of chicken soup(do not add water) . Gradually add one pound of american cheese. Stir constantly.When mixed well, add to the big pot of soup.Keep on low heat, stirring often until it thickens to your liking.The cooking time says 60 minutes, but really it may be more, it all depends on how long it takes the veggies to mush up.
