Here is how you make 2 CUPPER SOUP:

Put all ingredients (chicken at the bottom) except spinach, olive oil and sherry into slow cooker. Cover and cook on high 5-6 hours or low 7-8 hours. 1/2 hour before cooking time is over, put 4 cups of soup (no chicken) into a blender with the olive oil. Blend until frothy and return to cooker.
