The ingredients for Basic Diet Soup are:

1 pound of carrots, sliced
3 medium onions (1 1/2 lb.) chopped 4 cups
4 large stalks celery, sliced
2 large cloves garlic, crushed with press (chopped will do)
2 cans (28 oz. each) whole or diced tomatoes( I used no salt added)
1/2 small head of Cabbage(1lb.) thinly sliced (6cups)
3/4 pound of greenbeans trimmed and cut into thirds (I used frozen)k
1 can 48-49 ounces chicken broth (I used lower sodium organic
6 cups water
salt and pepper to taste
3 medium zucchini (1 1/4 lbs) sliced into half-moons
1 - 1 pound bag of frozen sliced yellow squash


How Do I Make Basic Diet Soup?

Here is how you make Basic Diet Soup:

1. coat 12-quart stockpot or 2 large saucepans with nonstick sooking spray. Over medium-high heat, add carrots onions, celery and garlic; cook 8 minutes till vegetables soften, stirring occasionally.2. Add tomatoes and their liquid, breakin up tomatoes. Add cabbage, green beans, broth, water, 1 teaspoon and 1/4 teaspoon ground black pepper( I omitted the salt);heat to boiling over high heat stirring occasionally.3. Reduce heat to low; cover and simmer 10 minutes stirring ocasionally. Increase heat again to high, stir in zucchini and yellow squash and heat to boiling. Reduce heat to low; cover and simmer 10 minutes or till all veggies are tender.Makes 28 cups of soup which I use two for a meal with these additions for variety. Just count all additions separately their nutrients are not included in the total.Minestrone Soup2 c. Basic Soup, add 1/2 cup white kidney beans rinced heat and then add whole wheat fusilli or rotini cooked as label directs: heat though. Stir in 2 tablespoons grated Parmesan or Romano Cheese and chopped fresh basil.(I used dried 1/2 teaspoon)Mexican Chicken Soup2 c. Basic Soup, stir in 3oz. bonless, skinnless chicken breast, cut into 1/2 inch chunks; 1/3 cup frozen cornand 1/4 teaspoon ground cumin; heat to boiling..reduce heat cover and simmer 3minutes or till chicken is cooked through, stirring occasionally. Stir in 3 tablespoons coarsely crumbled tortilla chips (1/2 oz.). Sprinkle with 1 tablespoon fresh cilantro. Serve with lime wedge....Love that lime!!!Southwest ChileIn a non stick pan cook 4 oz. ground trukey breast, 1/2 teaspoon chili powder, and 1/8 teaspoon ground cumin..cook till turkey is browned and cooked through, stirrring to break up turkey. Stir in 2 cups Basic Soup, 1/2 cup drained and rinsed canned black beans and 1/4 cup salsa; heat tto boiling ...reduce heat...simmer for 5 minutes to blend flavors.
