1 leek, white parts only, chopped (228 gr)
1 large white onion, diced (258 gr)
2 heads of broccoli with stems peeled (508 gr)
3 small white potatoes, peeled (288 gr)
1 large ginger golden apple, peeled (164 gr)
2 large sticks of celery, diced (184 gr)
1 bag of spinach (227 gr)
frozen peas (455 gr)
1/8 cup Carrington's Organic Coconut Oil
4 cups hot water
8 tsp. Compliments Chicken Bouillon concentrate
2/3 cup Campbell's Beef Broth (30% less sodium)
1 cup Riesling wine
2 tablespoons white vinegar
1 tablespoon brown sugar, packed
1 teaspoon Turmeric
1 tablespoon Basil
1/2 teaspoon cayenne
1 teaspoon ground ginger
1 teaspoon ground mustard
1/2 teaspoon coriander
1 teaspoon black pepper
1 teaspoon nutmeg
1/4 cup Low fat sour cream

Here is how you make Cr?me de Vert Soup:

1. Peel, dice, chop all of the veggies and put them in separate bowls.2. Heat the 4 cups of water. Once hot add 8 tsp. of the Chicken Bouillon concentrate (in a bottle).3. Put the coconut oil in a large dutch oven pot and melt on a setting of about 7.4. Add the ingredients 1 at a time and let cook for about 2 minutes before adding the next. I try to put them in onions/leeks first, then spinach, then the harder veggies, and lastly the apple.5. Once all the veggies are in there add the chicken bouillon and beef broth.6. Bring to a boil, then let simmer for 60-90 minutes, until all of the vegetables are nice and soft.7. Puree in a food processor in batches moving to a large bowl. When all of the soup is pureed, return to the dutch oven.8. Add the Reisling wine, vinegar and spices.9. Let cook another 15 minutes on low, stirring every so often.Serving Size:?Makes 8 - 1.5 cup servings
