This is the traditional way to prepare Freekeh as a soup, except normally chicken is left whole on the bone or removed to make "Imsakhan", which often accompanies Freekeh. I prefer to use chicken breast to keep it healthy and to shred the chicken and return to the pot for ease of eating. I personally keep the skin on the chicken while preparing the broth for more flavor, although it can be made without. Make sure you use bone-in breast, however, or the broth will be flavorless. Bring to a boil, reduce heat and simmer for 30-45 minutes depending on how chewy you like your freekeh. Add more boiling water if needed. While freekeh is simmering, Remove skin from chicken and discard. Using 2 forks, shred chicken breast. Once freekeh is done, add salt in 1/2 teaspong increments until you have reached desired flavor. Add pepper and shredded chicken breast. Return to boil.
