What Are The Ingredients For Hearty Healthy Soup Recipe?The ingredients for Hearty Healthy Soup are: 2 tbsp olive oil1 med onion chopped 1 med carrot chopped 2 stalks celery chopped 3 cloves garlic chopped 1 can tomatoes (diced or any other) 1 whole bay leaf (removed when done) 1 carton chicken or vegetable broth and an equal amount of water 1 med acorn squash peeled and cubed 1 cup elbow pasta or any other pasta 2 medium potatoes peeled and cubed 1 can beans (any kind you like ie: romano, pinto, kidney) 1/2 bag frozen chopped spinach Salt only if needed Pepper to taste. These are all aproximate measurements. I don't measure when cooking. I use whatever I have on hand. You can use all broth, or all water and add chicken boullion cubes; use different pasta, use zucchini, different beans. Put in whatever you like. Add chopped parsely at the end. You can add sausage or bacon when sauteing the onion for more flavour, however, more calories too. Adjust the liquid as you go and taste for salt. How Do I Make Hearty Healthy Soup?Here is how you make Hearty Healthy Soup: Saute onion a minute or so in the olive oil. Add celery and carrot and cook 2 minutes. Add choppped garlic. Once it smells fragrant add the canned chopped tomatoes. Add bay leaf. Let it all cook gently until about half the liquid has evaporated.Add broth and water . Add chopped squash. Let it boil gently for about 15minutes. Should look like a thin stew. Take out about 1/4 of the soup, puree it and set it aside. Add more liquid if it looks too thick. Add pepper to taste. Add the pasta. Stir, and once it comes to a boil, add the chopped potatoes. Once they're cooked, add the can of beans. Remove the bay leaf. Let it come to a simmer and add the chopped spinach.Add the puree. Stir and serve.
