2 T olive or vegetable oil
1 cup diced onion
1 lb. bag Baby Carrots, cut in bite size pieces
1 med zuchinni, peel and remove seeds, cut in bite size pieces
1 tsp ground sage
1 tsp ground thyme or poultry seasoning
1 tsp. garlic powder
4 cups low sodium chicken broth
1 can diced tomatoes
1 can cannellini beans, drained and rinsed
1 can flat Italian green beans (or plain green beans)
1 can corn
2 cups raw cauliflower
2 oz pastina uncooked
2 cups fresh spinach, chopped. I use baby spinach.
salt and pepper to taste

Here is how you make Hearty Tuscan Soup:

Saute onion, carrots and zuchinni in cooking oil. Add sage, thyme, and garlic powder.Add chicken broth and diced tomatoes. Bring to boil then reduce heat to simmer 30 minutes. Add canellini beans, green beans, corn and pastina (pasta).Steam cauliflower in microwave until soft, about 4-5 minutes. Puree and add to soup to thicken. Simmer 15 minutes.
