Clean and finely chop carrots, tomatoes, celery, peppers, spring onions and garlic.2. Place vegetables in a large pot and add herbs and pepper to taste.3. Dissolve stock cubes in a litre of water and pour over vegs. Bring to the boil, then simmer for 20 minutes, or until vegs are tender. Add diced/crushed tomatoes and beans. Stir. Continue to simmer.4. Add more water and herbs and spices as needed.
