What Are The Ingredients For Mom's Veggilicious Soup Recipe?The ingredients for Mom's Veggilicious Soup are: 2 tbsp light butter or margarine2 onions, chopped 3 medium-sized carrots, chopped or sliced 2 ribs celery, chopped 1 small zucchini, sliced 2 medium-sized potatoes, peeled and diced 2 medium sized tomatoes, peeled and chopped (I don?t peel mine) 3 tbsp parsley (I use dried parsley) 2 cups chicken or beef stock (I use 2 chicken bouillon cubes) ? tsp pepper ? tsp thyme 2 cups nonfat milk **note the chicken/beef stock can be substituted with vegetable stock to make the dish vegetarian** How Do I Make Mom's Veggilicious Soup?Here is how you make Mom's Veggilicious Soup: Melt butter/margarine in a large saucepan.Add onions; cook until fragrant. Do not brown.Add carrots, celery, zucchini, potatoes, tomatoes, half of the parsley, stock, thyme and pepper.Bring to boil and cover. Reduce heat; cook for around 25 minutes or until tender.Pur?e soup mixture in blender or hand blender carefully as its hot. I use hand blender in short spurts.Return to heat.Add milk, cook until heated thoroughly. Do not allow soup to boil.Garnish each serving with remaining parsley.If I want to freeze the soup, or keep it in the fridge for a few days only go as far as the blending stage. Add the milk when you?re actually going to have the soup for dinner it keeps better.You can use whatever veggies you like, I have thrown in broccoli, parsnips and even cabbage along with the above recipe.
