Prep all vegetables, add oil to stock pot set to high and add vegetables to pan. Saute for about 10 minutes, stirring occasionally; just enough to soften the vegetables. Add broth, tomatoes, and seasonings. Bring to heat, then turn down to Med-Low to simmer for 30 minutes. Add shredded chicken and cook until all vegetables are done.
