1 spaghetti squash, halved & cleaned

1 cup dry quinoa

Here is how you make Squintel Soup:

Brush both squash with olive oil. Roast, cut side down, for 45 minutes at 375F.While squash is cooking:Cook lentils and quinoa according to package directions.Combine butter, onion, and garlic in a pan, sautee until onions are translucent. Drain lentils once they are done cooking.Let squash cool before handling!Scoop out butternut squash flesh, liquefy in blender with chicken broth and garlic/onion mixture. Pour mixture into large saucepan. Comb out spaghetti squash with a fork to form "noodles". Add quinoa, spaghetti squash, and lentils to the broth mixture. Stir well, let simmer for 30 minutes until heated through.
