Spray a soup pot lightly with non-stick spray.Sweat the onions, celery, and any hard veggies like leek, bok choy, cabbage . about 7-10 minutes to help break them down. Add tomatoes and all other veggies, cook down until wilted. Pour on Chicken broth (add more if you like thinner soup. season with Mrs.Dash, salt, pepper and any herbs you like. I especially like curry with this. Cook about an hour, then puree well with immersion blender ( or blend in small batches in blender.
