Here is how you make Chilled Plum Soup:

Combine apple juice, plums, honey, thyme, ginger, peppercorns, cinnamon, and allspice in a medium saucepan; bring to a boil. Redce heat and simmer until the plums are tender, about 12-15 minutes. Stir occasionally. Discard the ginger, thyme, and peppercorns. Transfer the plum mixture to a blender and puree. Stir in the lemon juice. Refrigerate, covered, until chilled (2-4 hours or overnight).
