Add lemon slices, grated lime rind, lime juice, ginger and chili past. Whisk until chili paste is incorporated. Reduce heat and simmer uncovered for 15 min. Add chicken, mushrooms, chicken broth and fish sauce. Simmer 10 min longer, until chicken is cooked through but not tough. Remove lemon slices and ginger pieces. To serve, ladle soup into bowls. Spinkle each portion with 1/2 tsp lime juice. Top with a sprinkling of chopped cilantro and green onions.
