Grated rind of 1/2 lime
1 Tbsp lime juice
2 pieces (each 1-inch long) fresh ginger, peeled
1 Tbsp Thai red chili paste
10 oz boneless chicken breasts, sliced into bite sized pieces
1/2 c. straw mushrooms (find in Asian food)
2 c. chicken broth
2 tsp. nam pla (Thai fish sauce)
lime juice, chopped cilantro, green onions garnish


How Do I Make Thai Coconut-Ginger Soup?

Here is how you make Thai Coconut-Ginger Soup:

Bring coconut milk to a boil in large saucepan. Add lemon slices, grated lime rind, lime juice, ginger and chili past. Whisk until chili paste is incorporated. Reduce heat and simmer uncovered for 15 min. Add chicken, mushrooms, chicken broth and fish sauce. Simmer 10 min longer, until chicken is cooked through but not tough. Remove lemon slices and ginger pieces. To serve, ladle soup into bowls. Spinkle each portion with 1/2 tsp lime juice. Top with a sprinkling of chopped cilantro and green onions.
