Melt the butter in a large stock pot over medium heat. Add onion and garlic and saut?e gently until softened and translucent - about 3 minutes. 2. Add potato, broccoli and chicken stock and bring to a boil. Reduce heat, cover and simmer for 20 minutes. Add salt and baby spinach leaves. The heat from the soup will wilt the leaves down right away.3. Puree with an immersion blender, or let the soup cool a bit before adding half to a blender,strain out most solids with a slottedspoon and add to blender. Blend and Return soup to pan. Just do this to the consistancy that you like. You can blend allof it for a "Campbell's Soup" consistancy if you want to.4. Add cornstarch to milk, stir til dissolved and then add to soup. Add more salt and pepper to taste. Once soup is hot again (but not boiling!) whisk in sour cream and blend completely.5. Serve with a garnish of shredded cheddar cheese and some bacon .
