peel artichokes. Boil in large pot with 12 cups of water, vegetable or chicken soup cubes. When artickokes are soft , remove 1/2 of the artichokes to a bowl/ food preocessor and dice. Put fround artichokes back to pot and season with salt and pepper. Let cool. in a separate large pot warm 6 tbsp. olive oil and add cubed chicken breast.
