4 cups fresh button or crimini mushrooms
1 large onion
3 cloves garlic
2 tbsp butter
1 tbsp olive oil
Large splash (~2oz) fortified red wine like Vermouth
1 tsp all-purpose flour
4 cups chicken or vegetable stock
1/2 cup heavy whipping cream
1/4 cup chopped scallions


How Do I Make Silky Cream of Mushroom Soup?

Here is how you make Silky Cream of Mushroom Soup:

~ Clean green beans, trim ends and chop into 1 inch chunks. Steam beans for 10-15 minutes: Place in colander over saucepan with 2-3 inches boiling water in bottom. Place lid over beans and cook until crisp-tender.~While beans steam, rub mushrooms with damp paper towel to remove dirt. Remove stems and slice into 1/4 inch slices.~Dice onions and mince garlic.~In heavy bottomed stockpot, heat butter and olive oil on medium high until you hear a little sizzle. Add onions and 3 cups of the sliced mushrooms. Cook 5-7 minutes, stirring frequently, until vegetables are soft. Add sliced garlic and salt. Cook for another 1 minute. Turn heat to high for one minute and continue to stir.~Add wine to de-glaze pan. Lower heat to medium. Cook for 4-5 minutes.~Sprinkle flour over vegetables/wine and stir to coat. Cook for 1-2 minutes. Stir in chicken stock, green beans and remaining mushrooms. Bring to a boil. Lower heat and simmer 20 minutes.~Add heavy cream and diced scallions.
