2 baby Bok Choy
2 Red Bell Peppers, chopped
5 cloves of garlic (or to taste)
1 can Thai Kitch Lite Coconut Milk
1 Tbs Thai Kitchen Green Curry Paste
10 Basil leaves diced (or to taste)
1 Tbs ground Ginger
1 Tbs Cumin seed
1 can Chickpeas or Garbonzo Beans (rinsed and drained)
1 can Navy Beans (rinsed and drained)
1 can Adzuki Beans (rinsed and drained)


How Do I Make Leafy Green Curry Soup?

Here is how you make Leafy Green Curry Soup:

Wash and chop all veggies, drain and rinse all beans. Add all ingredients to a slowcooker or pot. Cook on low for an hour to allow all flavours to blend and the beans to cook through. If using dried beans (canned beans were used in my version) soak beans over night and increase cooking time to allow for the beans to cook through. Stir occasionally.Makes approximately 10 servings at 2 cups per serving* This version is fairly thick soup with lots of veggies for the amount of broth. You can dilute the calories and stretch the recipe further by adding additional broth.
