Here is how you make Massaman Curry Carrot Soup:

Sautee onion and garlic in coconut oil until fragrant. Add curry paste and cook 30 more seconds. Add fish sauce, stock, and carrots. Cook over medium heat until carrots are soft. Blend with immersion blender (or use regular blender in small batches) until smooth. Stir in coconut milk. Serve garnished with coconut flakes or a dollop of almond butter.
