How Do I Make Easy Barley Mushroom Soup?Here is how you make Easy Barley Mushroom Soup: Place barley in a small sauce pan with 2 cups of water. Bring barley to a boil, then reduce to simmer and cook for 20 minutes or until most of water is absorbed, but barley is not dry. Heat oil in a stock pot. Add chopped onions and saute until they are golden. Add carrots and celery and continue saute for about 5 minutes until they begin to release liquid. Add mushrooms and cook another few minutes until you see the mushrooms begin to release liquid. Add tomato paste (I use about 1/2 tsp to 1 tsp depending on your taste) and beef stock. Add the barley to the soup. Bring to a boil, reduce to simmer. Continue to simmer for about 30 minutes or until the vegetables are tender.
