2 cups water
2 chicken bouillon cubes
1 cup skim milk
2 tablespoons whole wheat or millet flour
0.75 cup reduced fat shredded cheddar cheese
Salt and pepper to taste

Here is how you make Light and easy Broccoli Cheddar Soup:

In a medium stockpot, boil water and bouillon (chicken or vegetable stock can be substituted). Add milk and frozen broccoli and allow to simmer until broccoli is soft. Remove about half of the mixture and blend until smooth before adding back to pot. For smoother soup, blend more of the mixture, or for a chunkier soup, blend less. Add flour and stir quickly to avoid clumps. The soup will thicken slightly. Remove from heat, and allow to cool slightly, and stir in cheddar cheese. Add salt and pepper to taste.
