1 onion, diced
1 cup carrots, chopped
2-3 medium potatoes, no skin, diced

3 cloves garlic
1 tablespoon ground cumin

In a large saucepan, combine all the ingredients. Bring it to a boil, then reduce heat, cover and simmer until lentils are soft (30-45 minutes). Stir occassionally while cooking. Serve with a squeeze of lemon if you want! Sprinkling fresh parsley on top will add color to this dish. Enjoy!!!p.s.
