1.5 tbsp Butter

Garlic, 2-3 cloves, peeled and roughly chopped

24 garlic scapes, or about 1.5-2 cups once chopped, flower bud removed, and chopped coarsely

2 large or 3 med. Russet Potatoes, diced (peeled or not is up to you)

5 cups low sodium Chicken Broth (homemade is better for this recipe so as not to overpower the delicate flavour)

2 cups spinach (or other greens of choice Can use up to
3 cups if desires, cals based on 2), washed and chopped

Juice of 1/2 lemon

1/4 tsp salt

black pepper to taste

Chive flowers to garnish (optional)


How Do I Make Garlic Scape Soup?

Here is how you make Garlic Scape Soup:

Prepare vegetables. Melt butter in dutch oven. Add garlic scapes and garlic cloves and saute for about 5 minutes. Add potatoes, stir and allow to absorb flavours for about 5-10 minutes. Add broth and simmer for about 20 minutes until potatoes are tender. Using either an immersion blender, regular blender or food processor with a metal blade, blend soup to the consistency desired. As blending, add the spinach, lemon juice, salt and pepper. Return soup to pot and simmer for a few minutes to bring back to temperature.
