Add dried spilt peas to hot water. Bring to simmer partially covered. While peas are cooking, add chopped ham, onions, and carrots to a small skillet with 1 Tb vegetable oil. Once onions and carrots have softened, add ham and vegetables to simmering peas. Add seasonings (Tabasco, herbs, red pepper flakes) as well as salt and pepper to taste.
