Here is how you make Cream of Celery Soup - Homemade:

Heat oil in saucepan, add onions and saute over med-high heat until they start to clear. Add garlic and saute another couple minutes. Add celery, mix in well with onions & garlic and saute for a minute. Add broth and 1 Cup water. Bring to a boil, then reduce heat to simmer. Add thyme. Simmer until celery is soft, 30-40 min-ish.Add evaporated milk, and bring to a scald. Either serve as is, or use an immersion blender.Serves 4, if you over-do the simmering, it might be 1/2 cup servings, if you don't, it might be 3/4 cup servings. Adjust seasonings to taste.
