2 cups onion any kind, (1 cup minced, 1 cup rough cop)
2 cups copped baby carrots, sliced thin
2 cups celery, diced
6 cups water or veggie stock
2 table spoons olive oil

Italian seasonings
Mrs. Dash
Garlic Salt
Garlic powder
Onion Powder

Here is how you make Homemade Lentil Soup with veggies:

Place lentils, chick peas, split peas and barley in water and soak for 18-20 hours.When ready to make soup, heat a 4 qt or 8 qt pan and add olive oil. Add garlic and and cook for 1-2 mins. Add onion, carrots, and celery... cooking till tender. (Add seasoning to taste through out this recipe)While veggies are cooking, drain and rinse the lentil/pea/barley mixture. When veggies are tender, add the lentils/pea/barley and stir.When all mixed up... add 3 cups diced tomatos and 6 cups of water. Bring to boil. Let soup boil for 5 mins, then cover reduce to a simmer and cook for 3 hours.
